inIngredients:
-large prawns
-avocado
-light salad dressing
-seafood sauce
-salad leaves
-red pepper, chopped
-salt and pepper
-Toasted bread (optional)
Instructions:
-toss salad leaves and chopped pepper with light salad dressing
-mix chopped avocado and lightly fried prawns, season with salt and pepper and toss in seafood sauce
-place mixture atop salad leaves
-serve with toasted bread

Ingredients:
-spinach
-cottage cheese
-cream cheese, reduced fat
-sour cream
-semi skimmed milk
-flour
-cheddar cheese with herbs
-tricolore pasta
-salt
-pepper
-butter (to grease baking dish)
Instructions:
-boil pasta until it is al dente, set aside
-heat milk, add flour
-add small amounts of cream cheese, sour cream and half of the cheddar cheese
-add cottage cheese
-mix spinach into heated mixture, stir until wilted
-add pasta into mixture
-add salt and pepper
-once combined, spoon mixture into greased baking dish
-add small extra amounts of shredded cheddar, cottage cheese and spinach leaves
-Bake for 20-30 minutes or until slightly golden

Ingredients: (for small loaf pan)
-Butter, 88 ml melted
-190 g flour (half white, half whole wheat)
-2-2 1/2 ripe bananas
-1/2 cup of diced strawberries, plus one thinly sliced- for topping
-3/4 tsp baking soda
-1/2 tsp cinnamon
-1 egg
-1/2 tsp vanilla extract
-50 g plain yogurt (I used Greek-style yogurt)
-1/3 tsp salt
-1/2 cup brown sugar
-3/4 tsp baking soda
Instructions:
-Grease loaf tin and set aside
-Melt butter on low heat, until browned. Pour into dish and set aside to cool
-In medium bowl, combine egg, yogurt and vanilla extract
-add mashed bananas
-once butter has cooled, add the butter
-In large bowl, combine flour, baking soda, salt, sugar and cinnamon
-Pour wet ingredients into dry ones, and stir until batter is smooth
-carefully fold in the diced strawberries
-transfer batter into loaf pan
-decorate the top with a thinly sliced strawberry
-bake for 1 hour, then cool for 15 minutes or longer if needed
*If you want, serve with cream cheese, peanut butter, or just regular butter!

Ingredients (makes one serving):
-baby spinach, about 3/4 of a pack
-olive oil
-1 egg
-Red Leicester cheese
-Cheddar cheese with chives
-sour cream (creme fraiche)
-salt
-pepper
Instructions:
-heat some olive oil in a skillet
-add spinach and sour cream
-add pinch of salt and pepper
-cook until wilted
-place mixture into baking dish
-cover with thin slices of Red Leicester
-break egg into middle of mixture, sprinkle with salt and pepper
-top with cheddar shavings
-bake for 10 minutes or until egg is fully cooked
-Serve immediately
