Ingredients:
-sweet potato, peeled and chopped into small pieces
-fresh rocket
-caramelised cashews
-mango
-sliced avocado
-grapefruit
-blackcurrant vinegar
-splash of olive oil
-splash of lemon
-toasted brown roll (optional)
Instructions:
-slice peeled sweet potato, arrange on oiled baking tray. Rub oil on both sides. Lightly season with salt, pepper, brown sugar and cinnamon. Bake on high until golden brown and tender
-arrange all fresh ingredients in salad bowl while potato is roasting
-add prepared potato slices, add blackcurrant vinegar, splash of lemon and olive oil
-add cashews, mix together and serve immediately
